Cajun Style Chicken with Rice


1-1/2 Cup Quick cooking rice
4 Medium Chicken breasts, skinned, -boned (1 Pound total)
1 Teaspoon Cajun seasoning
1 Teaspoon Dried thyme
2 Tablespoon Cooking oil
1 Small Red or green pepper, cut in - thin strips
1 Cup Frozen cut okra
1/3 Cup Dry white wine
1/3 Cup Chicken broth


Cook rice according to package directions. Rinse chicken; pat dry with paper 
towels. Stir together Cajun seasoning and thyme. Rub over chicken pieces. 
Heat oil in skillet over medium high heat. Cook chicken for 6 minutes or 
until no longer pink, turning once. Remove from skillet and keep warm. Add 
sweet pepper and okra to skillet; cook for 2 to 3 minutes. Remove vegetables 
and add wine to and broth to skillet. Scrape up any bits left in pan. Bring 
mixture to a boil. Boil for 3 minutes to reduce. Return vegetables to 
skillet and cook for 2 to 3 minutes to heat heat through. Serve over chicken 
and rice. Makes 4 servings
