Diabetic Carrot Cake Muffin Treats


1-1/2 Cup Whole wheat flour
2 Tablespoon Vegetable oil
1 Teaspoon Baking soda
1/4 Cup Raisins
1 Tablespoon Baking powder
1/4 Cup Chopped walnuts
1 Teaspoon Ground cinnamon
1/3 Cup Low fat milk
1/4 Teaspoon Ground nutmeg
8 Ounce Can crushed pineapple
1/4 Teaspoon Ground ginger
1-1/2 Cup Grated carrots
1 Egg

Combine the dry ingredients in a bowl. Add the remaining ingredients and
stir to blend. Spoon into oiled muffin tins or paper muffin cups. Bake at
350 F for 20 to 25 minutes.

1 muffin - 127 calories, 1 bread, 1 fat exchange 19 grams carbohydrate, 4
grams protein, 5 grams fat 149 mg sodium, 201 mg potassium, 23 mg
cholesterol
