Pork & Vegetable Skillet
1 Pound boneless pork, cut 1/2" thick
1 Tablespoon oil
2 Onions, sliced thin
1 Can (8 oz) Tomatoes, cut up
3/4 Cup water
2 Teaspoons paprika
1/2 teaspoon garlic salt
1/2 teaspoon caraway seed
3 Medium potatoes, sliced
1 Green pepper, cut into strips
Trim fat from pork chops. In a 12" skillet, cook chops over
medium- high
heat in hot oil 4 to 5 minutes per side or until brown. Remove
from skillet.
Add onions; cook 3 to 5 minutes or until tender. Drain off fat,
if
necessary. Add un drained tomatoes, water, paprika, garlic salt
and caraway
seed. Return chops to skillet. Bring to boiling; reduce heat.
Cover; simmer
10 minutes. Add potatoes and green pepper. Cover; simmer 15 to
20 minutes or
until pork and potatoes are tender and no pink remains in pork.
