Scallop And Broccoli Stir-Fry
1/2 cup dry sherry
2 teaspoons cornstarch
1 teaspoon sugar
1 teaspoon instant beef bouillon
1/4 teaspoon salt
2 tablespoons cold water
1 medium onion, sliced
1/2 cup mushrooms, sliced
8 oz. bamboo shoots
10 oz. broccoli spears
3/4 pound scallops
1 tablespoon cooking oil
Mix sherry, cornstarch, sugar, bouillon, salt, and water. Set
aside.
In hot oil, stir fry onion, mushrooms, and bamboo shoots till
onion is
tender. Add broccoli, stir fry 2 minutes. Push vegetables to
side of wok,
then stir fry scallops 3 minutes.
Stir sherry mixture, then add to scallops and vegetables. Cook
and stir till
thickened and bubbly.
