Seafood Gumbo
1 teaspoon margarine
1 cup onion, chopped
1 clove garlic, minced
6-1/2 cups water
1 package (10 oz.), frozen okra
1 package (10 oz.), frozen corn
1 cup celery, sliced
1/2 cup green pepper, chopped
3/4 pound raw shrimp, peeled
2-1/4 cups quick brown rice, uncooked
8 ounces vegetable juice
1/4 cup flour
1 can (16 oz.) tomatoes, cut up
1 teaspoon thyme
2 teaspoons paprika
1/2 teaspoon black pepper
1 pound crab meat, shredded
Hot Sauce, to taste
In a large saucepan, melt the margarine over medium heat. Add
the onions and
garlic and sauté them until they are tender. Add the next seven
ingredients.
Bring the mixture to a boil, then cover and reduce the heat to
medium and
cook until the rice is done, about 10 minutes. While the gumbo
is cooking,
combine the vegetable juice and flour for the gumbo and mix
until the lumps
are gone. When the rice in the gumbo is tender, add the
tomatoes, vegetable
juice mixture, thyme, paprika and black pepper. Cook at medium
temperature
until the gumbo is slightly thick. Stir in the crab flakes and
heat through.
Spoon into bowls and serve with bread and hot sauce on the side.
